Cupcakes


How cute are cupcakes? Very. How easy so whip some up? Very. A little icing on each one and you’re in for a little treat. I used a basic sponge cake recipe, but you can also use a pound cake recipe. I’ve made these quite a few times, but this time I had some strawberry colored essence to make some fluffy icing.
Ingredients:
½ cup butter
2/3 cup sugar
3 eggs
1 tsp vanilla
A pinch of salt
1 tsp baking powder
¼ cup warm milk
1 ½ cups flour
Icing:
¼ cup butter
1 cup icing sugar
½ tsp strawberry essence with color (substitute with vanilla or any other flavor)
Method:
Whisk the butter till it’s light and fluffy. Add the sugar and whisk more till well incorporated. Add the eggs one at a time and mix well along with the vanilla. Now tip in the flour, salt and baking powder. Slowly blend it together alternatively adding the milk. Scoop 2 tbsp of batter into your cupcake paper lined moulds and bake them in your pre-heated (200C) oven for 25 minutes in 180C. Let them cool while you make the icing. Whisk the butter and icing sugar till light and fluffy. Add the flavored essence and mix well. Icing is ready. But make sure the cupcakes have completely cooled down to room temperature before spreading the icing on them. We did! And it shows!
